. BANANA & PINEAPPLE PASSION CAKE .
Happy Sunday everyone, as we all know Sunday is the day for chilling and relaxing and as such this post is designed to be the perfect Sunday chilling accompaniment. Now I must say, it’s the first of this kind for me, i’ve never before ventured into ‘this’ territory, but I hope you all find it enjoyable. Grab a cup of tea and enjoy a little down time.
So the reason this post is a little different to my usual is that I’ve decided to share with you a recipe for my absolutely FAVOURITE cake. Now you may have seen this cake on my blog before – it’s what my family made me for my 24th birthday a month or so ago. I literally was in heaven and so this weekend we decided to recreate it. Now I should add, it wouldn’t be my blog without an outfit too, so i’ve also added some pics of my ‘chilled outfit’.
So let me introduce to you, Banana Passion, the most delicious cake of all time. First off here’s what you need to make this fine specimen:
The Masterpiece Cake
* 2 or 3 ripe bananas
* 1 x 227g tin of pineapple (or 130g fresh)
* 200ml groundnut oil
* 250g caster sugar
* 3 medium eggs (separated into whites / yolks)
* 3 tablespoons of milk
* 100g chopped pecan nuts
* 200g plain flour
* 3/4 teaspoon (or a healthy pinch) of both cinnamon and ground ginger
Best Frosting Ever
* 180g unsalted butter
* 150g icing sugar
* 450g low fat cream cheese
* Teaspoon of Vanilla Extract
& Sprinkles & glitter :)
1. First up select your banana’s and get them all squashed up, mix in your drained chopped pineapples and mush those up too.
2. Whisk in your oil and sugar, followed by the egg yolks and milk.
3. Fold in the pecan nuts
4. Sift the flour and the baking powder together and stir into the mixture too. Whisk up your egg whites in a separate bowl and then add fold them into the main mixture.
5. Add in your cinnamon and ground ginger – I love cinnamon so I went a little wild at this stage.
6. Get your tasty mixture into a baking tin and bake for 60-70 minutes (you want to be able to stick a knife in and it come out clean)
7. Once baked you need to let the cake rest and cool down. I suggest you make your frosting now – you just need to cream the butter and icing sugar in a food processer and blend with the cream cheese and vanilla until smooth. SIMPLE
8. Split your cake into 3 layers, and sandwich back together using the frosting, mmm. Once you’ve layered it all up, cover the entire cake in the frosting, sides too, and then decorate with sprinkles as you see fit.

So you all seemed to love my midi dress, it was great to hear all your thoughts. As promised I wanted to show you the more casual outfit look, this time I really left it simple (as I was lounging in the house baking). I’m still getting used to the cut of the dress as it does make me look very frumpy, but it’s still growing on me.

This sounds so good! One of my friends birthdays is coming up soon and I always make him a cake, would make this except he hates bananas (how?!!?) so I’ll have to find another excuse to give it a try. You put me to shame if this is your chilled outfit, when I’m baking I’m normally in pyjamas or a big hoodie! You look gorgeous though. I think it’s such a great idea to post about something that you love – especially when it’s something as delicious as this cake!
It must have taken so much time to take pictures of every step, and then upload them in such a visually pleasing fashion. The pictures are really high quality too – so this post is just all around gorgeous.
I’m also in love with your watch – where is that from? I love the stripe on the band, it’s so classy. The heather grey of the dress is perfect, and goes wonderfully with your blonde hair. I wish I looked this good in a relaxing Sunday outfit. Alas, mine usually consists of leggings and a torn t-shirt, haha.
