. CARROT CAKE .
I have 3 favourite cakes, banana cake, cheesecake and carrot cake. I also do like a good crumble every now and then, especially home made by my mum in winter. Now if and when I do a spot of baking these tend to be the bad boys I cook up. I have shared my banana passion cake recipe on my blog already (here) but I thought it about time I added another recipe to the mix, this time a carrot cake one. This is what Jase & I made on Sunday last week and it was super yummy & well worth the bake.
I’ve blogged this as a visual recipe guide, so I hope you enjoy (and it all loads okay). Here’s what you’ll need to make this delicious carrot cake:
Cake:
butter to grease
3 x medium eggs
150ml (1/4 pint) sunflower oil
150g soft dark brown sugar
200g golden caster sugar
2 tbsp vanilla extract
75ml buttermik
275g wholemeal flour
2 tsp baking powder & 2 tsp ground cinnamon
1 tsp ground nutmeg
5-6 carrots grated to make 300g
100g desiccated coconut
227g can pineapple chunks (drained & crushed)
200g walnuts roughly chopped
Icing:
50g butter softened
100g icing sugar
1/4 tsp vanilla etract
50g full fat cream cheese
zest of half an orange & 1 tsp of juice
Baking Instructions:
Preheat over at 180 degrees / gas mark 4
Bake for 2 hours (or until skewer comes out clean)
Cool in tin for 20-30 mins
