. POACHED EGGS & SALMON .
Keeping to my new theme of posting breakfast treats on Saturday, today’s post is a new favourite variation to my typical eggs and salmon routine. Having eaten at The Breakfast Club a few times and each time fallen in love with the mexican style dishes (AND the berries and vanilla cream pancakes), I decided to start mixing up my breakfast accompaniments to create a zingy and fresh breakfast dish, inspired by the Breakfast Clubs Huevos Al Benny.
Last weekend Jase and I whipped up some poach eggs and salmon on granary toast, but added a zesty avocado concoction and some tasty salted tomatoes. Most of The Breakfast Clubs mexican style dishes are loaded with avocado, which happens to be one of my favourite things of all time. I’m always knocking up home made guacamole and have an avocado with everything I eat, so knowing how to add it into my breakfast was a bit of a gift.
Thc combination worked perfectly and will definitely be a new staple of mine. To finish the breaky off, I obviously had my ‘usual’ bloody mary, whipped up at home with my Harvey Nics Vodka and all the ‘must have’ spices and herbs, and a strong coffee to get us up and ready for the day. A good brunch really sets you up for a day of exploring.

My local cafe does scrambled eggs with smoked salmon mixed in. Heaven. In fact, anything with smoked salmon is heaven. x

Amazing, this looks so yummy. Sadly I cant get away with breakfasts abroad ( apart from on the continent and perhaps in the states- althoug I’ve never been) I have to have sweet food for breakfast!x
