. BOILED EGG & SOLDIERS .
As you all probably know by now, at the weekend i’m all about the breakfast. Whether that’s testing new brunch spots (today we’re heading to the Breakfast Club in Hoxton) or whipping up my own a home. When making brunch at home, Jase and I usually favour scrambled eggs and salmon with usually some spinach and vine tomatoes but last weekend we mixed it up a little and went back to the old school …
There’s something hugely comforting about boiled eggs, they remind me of childhood and make me feel young and comforted when I have them. They’re not fancy pants, they’re no hassle, but they are super yummy. When you’re looking for something a little quicker or lighter but still fancy a proper good breakfast, boiled eggs will sort you right out.
There’s no ‘right or wrong’ with humpty dumpties … cook them to your liking, for me, that’s 6 minutes bubbling away so that when you get them out and crack the top, they’re oozing with yummy yolk and ready for some serious soldier dunking. On the point of soldiers, really it’s the more the merrier. I prefer chunky granary bread soldiers, but anything goes really. The finishing touches to my boiled eggs always are a sprinkling of rock salt on top, just to bring out the full flavour. MMMM.
Goes without saying that this sort of breaky MUST be accompanied by an oversized mug of tea / coffee and some fresh orange juice. What better way to start your weekend …

I love eggs royale – that’s my brunch of choice! I tend to just do poached eggs on toast with smoked salmon when at home – with some asparagus on the side :-). I LOVE BRUNCH.
